Better Late Than Never
This was supposed to be #sundaysupper.
I also made a switch with the biscuits. Again, because it’s so hot outside, I used the Ninja Foodi air fryer and baked the biscuits in that!! It worked really well other than the fact that I set the one side to bake and the other side to air fry so the air fried side baked faster than the other but it was fine! Next time I’ll make sure I hit bake for both sides!!
But better late than never. And man was it ever worth the wait!! I don’t know if it was because I was hungry (hunger is the best spice) but the roast was tender and juicy.
I decided to use the instant pot to cook the inside round roast because it makes roasts so nice and moist and it is so freaking hot outside! I used a recipe I found on the internet. I was skeptical because it said to only cook for 3 minutes and let it natural release for 30 minutes. I did not think that was long enough to cook but I decided to trust it. And it was worth it. It was right on temperature when it was done. Then I let it rest for 8-9 minutes (I was busy with the asparagus so I might have let it rest an extra minute).

Oh, and usually I’m terrible at making gravy but tonight it worked out really well! The stars must have all aligned for me tonight!!
